# Day 2 of a busy week

We discovered this recipe during [our week as vegetarians](http://www.bradenanderin.com/?q=node/321). It has become one of our new favorites. Thanks Robin!

**Ingredients**

- 1 cup each, sliced zucchini and yellow squash
- 1 16 oz. jar chunky salsa – mild, medium or hot – whichever way you like it!
- 1 14 oz. can stewed tomatoes
- 1 can black beans, rinsed and drained
- 1 package frozen corn
- 1 teaspoon chili powder – add more to taste if desired
- salt and pepper to taste

**Instructions**

( 1 ) Throw it all together in a stew pot

( 2 ) Bring to a boil, then reduce heat and simmer for 15 minutes

We ate ours frito chili pie style – fritos on the bottom, cheese and sour cream on the top
