Day 2 of a busy week

We discovered this recipe during our week as vegetarians.  It has become one of our new favorites.  Thanks Robin!

Ingredients

  • 1 cup each, sliced zucchini and yellow squash
  • 1 16 oz. jar chunky salsa – mild, medium or hot – whichever way you like it!
  • 1 14 oz. can stewed tomatoes
  • 1 can black beans, rinsed and drained
  • 1 package frozen corn
  • 1 teaspoon chili powder – add more to taste if desired
  • salt and pepper to taste

Instructions

( 1 ) Throw it all together in a stew pot

( 2 ) Bring to a boil, then reduce heat and simmer for 15 minutes

We ate ours frito chili pie style – fritos on the bottom, cheese and sour cream on the top
