Toilet frog?

This was one of the first recipes we tried on the new grill. If you have a grill and like fajitas, we highly recommend trying this recipe.

Ingredients

  • 1 ½ pounds skirt steak
  • 1 tablespoon chili powder
  • 1 teaspoon ground coriander
  • 1 teaspoon coarse salt
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • 2 limes
  • 1 green bell pepper
  • 1 onion

Instructions

(1) Place skirt steaks in a single layer on a baking sheet.

(2)  Combine the chili powder, coriander, salt, cumin, garlic powder, onion powder and black pepper in a small bowl. Mix well.

(3) Sprinkle the mixture over the meat, patting it on with your fingertips. Let stand for 10 minutes.

(4) Squeeze the limes over both sides of the meat. Cover and let marinate in the refrigerator for 30 minutes to 1 hour.

(5) Preheat grill to high.

(6) Place the bell pepper on the hot grate. Turn with tongs to grill on all sides, about 15 to 20 minutes.

(7) Wrap pepper in wet paper towels. Let cool.

(8) Remove the skin from the pepper. Cut the flesh off the core and scrape out the seeds. Cut into ¼ inch strips.

(9) Place the skirt steaks on the hot grate and grill until cooked to taste; 3 to 4 minutes per side for medium-rare.

(10) Place the tortillas on the hot grate and grill for 15 seconds per side, until soft.

Serve with sour cream, cheese, lettuce, salsa sautéed onions, etc.
